Bench Stone Kits are designed with multiple stones, generally starting at a course or medium grit to remove the shoulder from your tool or knife and reset the edge, creating a Burr. Sharpening kits will then have a fine stone to polish the edge, some kits will have more than 2 stones that are used to create the finest edge possible allowing your knife or tool to have less friction when in use and stay sharper for longer.
